Meet Chef Marcus Bellamy

Executive Chef & Culinary Director

Look, I've been cooking for over 20 years now, and I still get excited when a dish comes together just right. Started in my grandmother's kitchen in Lyon, worked my way through Michelin kitchens in Paris and London, and somehow ended up here in Toronto - couldn't be happier about it.

My philosophy's pretty straightforward: respect the ingredients, don't overcomplicate things, and always cook with someone in mind. Every plate that leaves my kitchen is something I'd be proud to serve my own family. We work with local farms and suppliers who share our obsession with quality - these relationships matter more than any fancy technique.

What we're doing here at Eldryth Valorium is blending classic French techniques with Canadian ingredients and a touch of unexpected creativity. You'll find familiar flavors presented in ways that might surprise you - but never for the sake of being different. It's about making each meal feel special without the pretension that sometimes comes with fine dining.
